Lindsay and I love a great treat. Smart Cookie's ice cream sandwiches are the best. I made my own version this week, and they are divine! I paired mine with Farr's mint chocolate chip ice cream. Super yummy. To make the cookies, mix:
1 box Devil's Food cake mix
2 eggs
2/3 cup shortening
Bake at 375 degrees for 10-12 minutes. Fill with a scoop of your favorite ice cream, and enjoy!
